Anna Polyviou is in residence at The Langham Sydney. Anna is recognized as the ‘powerhouse of pastry’ honing her talents in the world’s best kitchens, from London’s famous Claridge’s with the world’s most influential pastry chefs to working with one of the top chocolatier’s Pierre Hermes in Paris, along with some of the top hotels and venues in her home country of Australia.
Anna will use her creative flair to design new dessert delights across all areas of the hotel including Kitchen’s on Kent interactive dining experience, afternoon tea, in-room dining, special events and activations.

From a delicate take on the English style prawn cocktail and egg mayonnaise sandwiches, to delectable desserts including Anna’s Chocolate Flourless Sponge with chocolate mousse, and Tropic Twist with flavours of passionfruit and ginger pineapple.
