To start
- Trio of Sydney rock oysters  
- Smoked scallop, kaffir lime dressing 
- Freshly grated Tasmanian wasabi 
- Crab salad, nam jim dressing   

- Grilled green king prawns, dashi and lime butter, nashi pear

Mains to share
- Whole spatchcock, prune farce, wrapped in pancetta, chicken and ginger sauce 
- Mash potatoes
- Organic roast dutch carrots with dukkah

- Soft meringue, mango, coconut, crème anglaise
